Breakfast: eggs over easy with kale

Hey y'all!I have so many things that I want to write, so many proclamations of love to the great Kale Gods of the Sky... but I'll leave it at this. Sautee kale in extra virgin olive oil. Add a sprinkle of sea salt. Then make eggs over easy (soft yolks). Salt, pepper... and that's it! It's a great way to wake up, and you can always add sweet potatoes or whatever grain/carbs if that's what you're into. I personally love soft yolks, they're such a bright burst of color, like abundant sunshine. It is sumptuous!

  1. Sometimes I will take whole steamed collard or kale leaves and make a "burrito" with them, putting eggs and other good stuff inside. I do it to get more greens and avoid the wheat, but getting more greens is benefit enough.

    1. That sounds awesome, I'll have to try that! Josh has a technique of ripping the collard/kale with his bare hands, no knife or cutting board necessary. Not even cutting the kale would be one step simpler though... I will have to tell him about this.
